Monday’s Menu: Baked Scallops & Aglio e Olio

Happy Monday everyone! Spot86 hopes that everyone had a fabulous weekend and are ready to start back up their weekly grind. Today we are kicking off the week with an awesome and easy recipe that the whole family will love, baked scallops with a side of aglio e olio. Aglio e Olio is a traditional Italian pasta recipe that is full of flavor and super easy to make. However, we like to start off with the hard stuff. Let’s begin with the scallops.

Here’s what you need:

  • Scallops, rinsed and drained
  • Melted butter
  • Garlic cloves
  • Salt and pepper for taste
  • Italian breadcrumbs
  • Olive Oil

Now that you have everything you need to make delicious baked scallops, let’s start off by preheating the oven to 425 degrees. Place the scallops in a greased casserole dish and pour on the melted butter. In a separate bowl, combine the bread crumbs, salt and pepper, olive oil, and garlic cloves. sprinkle the mixture on top of the scallops. Bake until the crumbs are brown and the scallops are done. This should take 15-20 minutes. Now onto the aglio e olio.

Here’s what you need:

  • Garlic cloves
  • Olive oil
  • Red pepper flakes
  • Salt and pepper
  • Grated Parmigiano-Reggiano cheese
  • Angel hair pasta

Bring a large bowl of lightly salted water to a boil. Cook the angel hair pasta, stirring occasionally until cooked through. Angel hair pasta does not take very long to cook, so make sure you are frequently checking on it. Combine the garlic and olive oil in a skillet over medium heat. Reduce the heat when the olive oil starts to bubble. Continue to cook until garlic is golden brown. Pour the mixture into the pasta and add the red pepper flakes, salt and pepper. Sprinkle the Parmigiano-Reggiano on top.

I like to eat this dish on a plate with the baked scallops resting on top of my aglio e olio. This allows the two to combine flavors. YUMMY! We hope you enjoy this recipe. Stay tuned every week for more delicious recipes like this one.
