Happy Soul Sunday everyone! I hope you all enjoyed a lovely Thanksgiving. Now that your holiday weekend is coming to a close I bet you are wondering, “what the hell am I going to do with all of this remaining food.” Assuming that you might possibly have some Thanksgiving scraps let. You don’t want to enjoy the 6th meal you’ve already had of leftovers. You also don’t want to toss it because you’ve worked so hard over a hot stove to get rid of anything. How about you turn it into something else? The Spot86 Chix turn to the amazing Martha Stewart for some help. Check out this very easy and very delicious Thanksgiving leftover recipe that’ll turn your scraps into a masterpiece.
Thanksgiving-Leftovers Shepherd’s Pie
- 3 cups cooked stuffing
- 1 cup cranberry sauce, plus more for topping (optional)
- 1 pound sliced cooked turkey
- 10 ounces glazed carrots, (or another leftover vegetable)
- 4 to 6 tablespoons gravy
- 3 to 4 cups mashed potatoes
Preheat oven to 350 degrees. In a 9- to 10-inch pie plate, mound stuffing on bottom; layer with cranberry sauce, turkey, and carrots. Drizzle with gravy; spread potatoes over surface to sides of dish. Top with more cranberry sauce, if desired.
Place pie on a baking sheet, and bake until heated through and potatoes are golden, 35 to 40 minutes. Let cool slightly.
