Banana fritters is a popular Caribbean cuisine that includes over-riped bananas fried in a sweet batter. You can have your banana fritters flat like pancakes or in little bites. Today, Spot86 is going to teach you how to make the pancake-like version. Here are the ingredients you will need:
- 5 bananas (duh)
- 3 tbsp of brown sugar
- ¼ tsp of nutmeg
- ¼ tsp of cinnamon
- ½ tsp of vanilla extract
- 1 pinch of salt
- 1 cup of flour
- 1-2 Tbsp of cooking oil
- 1 Tbsp of granulated or powdered sugar
First things first, mash the bananas in a medium size mixing bowl with sugar and spices. Once the bananas are mashed, add the flour into the mixture. Heat 1 or 2 Tbsp cooking oil on High in a skillet and, using a serving spoon, spoon the batter into the skillet. Fry the fritters until crisp and brown on both sides. You may have to add more cooking oil. You know they are done when you press them and no batter oozes out. Remove fritters from pan and place on paper towel. Top your perfectly golden fritters with the granulated or powdered sugar.
